Our client is looking for a chef with knowledge of Chinese cuisines.

 

Qualification Level: High School Diploma
Experience Level: Mid-level
Experience Length: 4 years

Job Location: Dar es Salaam

Salary: USD 2000 Net salary

 

Job Description

Reporting to the Executive Chef, the Chef de Cuisine Chinese will be responsible for the Asian outlet, with a brigade of five chefs and offering traditional Classical and Modern Chinese Cuisine.

 

Responsibilities

v  Plans and implements an excellent dining experience.

v  Ensures smooth operation in the Kitchen area and proper products control for higher profitability yields.

v  Ensures the highest level of food safety

v  Preparation of Chinese cuisines

v  Preparation of Mandarin cuisines

v  Handles guest feedback with regards to quality / variety of food served.

v  Provide direction for the day to day operations of the Asian outlet.

v  Develop and create standard recipe cards with pictorials according to the Executive Chef’s policy.

v  Establish and maintain professional and effective communication within the whole Food & Beverage Department.

v  Ensure all Asian kitchen items are prepared and served according to the standard set by themselves and the Executive Chef.

v  Take a professional self-interest to constantly maintain a high standard of food preparations, controlling cost and wastage, reduce any loss and breakage of operating equipment by enforcing preventive Policies and Procedures.

v  Monitor all Asian kitchen costs and take corrective action, when necessary to reduce expenses.

v  Inspect daily, all fresh food received to ensure a high quality is maintained.

v  Inspect all food stores and refrigerated areas and suggest, where necessary, to correct storage methods to comply with Health & Safety regulations, to avoid spoilage and ensure regular turnover of food items and give completed check lists to the Executive Chef.

v  Develop with the Training Manager training plans for the Asian kitchen.

v  Ensuring the quality and standards at the outlet meet the expectations of the customer

v  Maintaining consistency in quality, hygiene, safety and sanitation standards

v  Comply with all Client company policies

v  Any other duties that may be delegated by the management through the Executive Chef

 

Desired Skills & Qualifications:

v  High School Certificate/Diploma in food production

v  Four years minimum experience in traditional Classical and Modern Chinese Cuisine and basic knowledge of Pan- Asia cuisines (Vietnamese, Indonesian and Thai cuisine).

v  Previous position as a sous chef or chef de cuisine

v  Previous experience within a luxury 5 star establishment Experience in a similar role and proven track record may be considered in lieu of specialised education

v  Strong people leadership skills Computer literacy

v  Good communication skills

v  Basic knowledge of the English language is mandatory

v  Sound, checkable previous employment references

v  Able to work in a fast paced environment and can multitask

v  Ability to remain calm and composed under pressure

v  Has the passion towards quality and creativity for new modern presentations of Chinese Cuisine.
