CAMP MANAGER

Duties, Responsibilities & Performance Standards

Daily Duties

  • Communicate with reservation department on client’s arrival and departure.
  • Greet and briefing basic information about the camp to clients
  • Managing client’s services and activities
  • Answering any inquiries relating to camp policies and services and resolve any client complaints.
  • Work together with other staff and management in a smooth, safe, and harmonious manner to ensure clients have a memorable stay at the camp.
  • Inspect client rooms, public areas, and grounds for cleanliness and appearance
  • Ensure clients are well served their meals and drinks,
  • Lead, manage, teach, and coach camp teams, including support members, food services, housekeeping, laundry, maintenance, and other team members.
  • Inspect client’s rooms, public areas, and grounds for cleanliness and appearance.
  • Coordinating Back of House activities of the camp
  • Document organizational or operational procedures.
  • Managing movement of staffs according to company policy

 

General Requirements

 

  • Minimum 2 years’ experience as in hospitality industry
  • Previous experience in bush camps will be highly valued
  • Education in Hospitality and Hotel Management is preferable
  • English speaking
  • Leadership skills, guest oriented, strong communication skills
  • Team-orientation, loyalty, and excellent leadership skills
  • Flexibility, commitment, dedication, and reliability
  • Good manners and a positive attitude
  • A hospitable and service-oriented attitude
  • Age in between 30-45 years old

 

 

HEAD CHEF

Main Tasks:

  • Creating menu items, recipes and developing dishes ensuring variety and quality
  • Ensure all food is prepared as per food preparation requirements
  • Ensure meals are produced on time, and sufficient quantities are available for the various areas
  • Maintain stock levels of all kitchen supplies
  • Prepare daily pastry and bakery requirements as per the menu
  • Be available for functions as they arise to ensure that the food is prepared and served as required
  • Briefing clients on the menu and be able to meet client’s dietary requirements.
  • Ensure all staff are aware of their duties and what is expected of them
  • Teach new staff skills they require to perform their roles to the required standard
  • Delegate duties to kitchen staff as per the menu requirements
  • Oversee and monitor the work of kitchen staff to ensure all tasks are done as required
  • Give staff feedback on their performance to enable staff development
  • Ensure wastage is minimized by careful supervision of food preparation methods
  • Ensure proper hygienic storage methods are utilized to prevent food loss
  • Oversee the ordering and control of stock levels
  • Ensure staff are aware of and follow safe work practices at all times Ensure his own workstation is kept clean and hygienic at all times
  • Assist other staff in the cleaning of the kitchen at the end of the shift
  • Performing other duties as assigned by the camp manager and the Head Office.

Skills and Abilities Required

  • Professional and Qualified Chef both in hot kitchen and pastry
  • Certificate or Diploma in hotel management
  • Minimum 2 years relevant experience as a Chef or similar role in the hospitality industry
  • Punctual, organized, and trustworthy
  • Ability to manage and motivate other people
  • Excellent communication skills
  • Attention to detail, Ability to solve problems and resolve conflict in a constructive manner
  • Willingness to take initiative and make decisions
  • Ability to delegate tasks effectively
  • Ability to adapt to a bush environment

 

 

 

 

ROOM ATTENDANT

The Room Attendant will be responsible for cleaning and attending staff during arrival and departure.

Duties and responsibilities

  • Responsible for meeting and greeting clients and doing briefing
  • Responsible for cleanliness, and appearance of the camp
  • Ensuring rooms are made per client’s camp standard
  • Maintaining par stock of guest Supplies cleaning equipment
  • Pay particular attention when preparing activities to eradicate
  • Preparation of information management
  • Coordinate and manage guest complaints

Additional Roles

  • Daily inspection of public places, guests’ rooms, and staff
  • Coordinating preventive maintenance schedule of payments with public location and Maintenance
  • To maintain a high standard of cleanliness within the department.
  • Report any untoward incidents/minor repairs or actions that require attention to the camp manager
  • Responsible of cleaning and preparation of rooms.
  • To maintain a standard of conduct and personal appearance which will instill a sense of confidence in the staff, and clients
  • Manage own time and priorities workload effectively and efficiently.
  • Maintain accurate and timely documentation with high standards of verbal and written communication.

 

General Requirements

  • Diploma in hotel management/hospitality industry
  • Two to three years of experience in similar role
  • English Speaking is a must

 

 

 

WAITER

  • Greet and seat guests.
  • Take orders and answer questions Clients may have.
  • Note down any changes or allergy information relating to guests.
  • Pour hot and cold drinks and serve these to guests.
  • Communicate any changes to the menu or to orders with kitchen staff.
  • Ensure tables are clean and tidy at all times.
  • Set tables with cutlery, glasses, and other equipment ready for new guests.
  • Greet and escort customers to their tables
  • Present menu and provide detailed information when asked (e.g., about portions, ingredients, or potential food allergies)
  • Prepare tables by setting up linens, silverware, and glasses
  • Up-sell additional products when appropriate
  • Take accurate food and drinks orders, by taking notes
  • Communicate order details to the Kitchen Staff
  • Serve food and drink orders
  • Check dishes and kitchenware for cleanliness and presentation and report any problems
  • Arrange table settings and maintain a tidy dining area
  • Deliver checks and collect bill payments
  • Carry dirty plates, glasses, and silverware to kitchen for cleaning
  • Provide excellent customer service to guests

Requirements

  • 1 year of customer service experience.
    • Proven experience working with food and beverages is a plus.
    • Excellent communication skills, both written and verbal, English language is a must
    • Great time management and problem-solving skills.
    • Ability to work on your feet for extended periods.
    • Diploma in hotel management/hospitality industry
    • Proven work experience as a Waiter
    • Attentiveness and patience for customers
    • Excellent presentation skills
    • Strong organizational and multitasking skills, with the ability to perform well in a fast-paced environment
    • Team spirit
